Thin pancakes (patches)

Ingredients

warm milk 1 l
flour 2 glasses (250 ml)
Eggs 4 things.
salt (more can be added) 3/4 tsp
sugar 1 tbsp. l. (who loves sweets,
then more)
refined oil 80 ml

Cooking method

Mix (do not beat with a mixer) eggs with 1 cup of warm milk. I usually mix in a cocktail blender. Add the rest of the products. The dough should turn out like liquid sour cream. Only then will the pancakes be the thinnest.
Add refined butter to the dough and bake like regular pancakes. The pancakes are very, very thin and delicious. If someone cannot turn the pancake over in a frying pan, then you can add a couple of tablespoons of flour to the dough. Also, if the pancakes are thin and cannot be turned over, then starch is added instead of 1/3 of the flour to make the structure of the dough denser.

The dish is designed for

30 pcs

Note

Many people probably know the recipe for handpieces. After all, they can be considered pancakes?
They turn out to be thin.

NALISTNIKI - thin pancakes made of flour and starch, which are put in a cast iron or in a frying pan, poured with oil and put in the oven; traditional Belarusian and Polish dish. Nalistniki are also made with curd filling, eaten with sour cream, milk, jam.

So, yesterday I baked about 30 pancakes, first I took 500 g of milk (I used the Zhivchik recipe, thanks, Tan) My husband comes running and shouts what is needed for a liter, that I’m just teasing and, again, the child will have something to pull. I obeyed, added another 500 g and that, I fried it, twisted half with the filling, left half and went to rest (my back could not stand such a standing at the stove))). I come in 20 minutes. to the kitchen ... and there -4 with filling and 2 without filling. When I asked my husband how much he ate, he replied that there were 3 things, when I voiced a natural number - he did not believe it, said that he could not eat so much. The child did not take part in this.
I ate blinkoff. A thought it was next. day will remain

I baked such a thing yesterday. Everyone liked it very much.
I did half the norm, and put 1 tbsp of sugar. l. Only my edges turn out to be dry ... I have a small frying pan, with a coating and low sides. When I spread it over a frying pan, part of the dough crawls onto the sides and it turns out crispy ...

Well, a stack - the eye rejoices! So smooth, as if photoshop helped!

No, I helped my husband. True, he folded at the beginning as best he could. Well, as I already bake, I try to put everything evenly.
For that portion of the dough, which I laid out in the recipe, it turns out not enough pancakes, so my husband ordered me to eat from the belly. "And then, he says, you bake every day and there is nothing."
I made the dough myself. How many liters of milk he does not remember. The only thing, when I came, the pot of dough was very large. I think that not less than 4 liters. milk dough.
Husband and son are very fond of pancakes.

Did you make this stack of the above products?
Cubic, Of course not. My husband is tired of the fact that I bake a little every day. And they and their son love pancakes very much, so they took the initiative into their own hands. I made a dough (it's good that there is a blender and the dough turned out without lumps) and baked, and I was just helping. True, I baked in 3 pans at once. Judging by the amount of dough that my husband started, there were 4 liters of milk, no less

Why so little? It will be on the floor of the bite. From 1 tbsp. spoon of sugar for half a liter of milk pancakes did not taste sweet? I usually 1 tbsp. l. I put on 1 liter. milk.

Hairpinthen you are fast in hand. Since the dough is thin, it is necessary to distribute it calmly and slowly over the pan.

Tell me, how many ml is the glass? I'm interested in the exact amount of flour. I liked the recipe, I want to fry pancakes tomorrow.
kipitka, table glass, in which 250 ml.
The proportions of the dough are 2: 1, that is, 2 tbsp. milk: 1 tbsp. flour or 2 liters of milk: 1 liter can of flour (just kidding).
And also very important: you immediately put flour into a glass, and then just sift it. Good luck!

Zhivchik , I have only a husband capable of such a stack !!!

And so that the edges are not dry, when the pancake is removed from the pan, you need to grease the edges with a piece of butter

Mistress, I think that such a trick will not work with these pancakes. They are very thin. This is if the pancake is thicker, when the proportion of dough is 1: 1 (milk: flour), then maybe it will help.
And in these pancakes, the edges are steamed a little by themselves when they lie in a pile.
And when you just bake them, then these edges will wrap around in all directions.

Zhivchik, Thank you! Yesterday I made pancakes. According to my recipe, 23 pancakes came out and 390 grams of flour went for this. Really thin !!!
Zhivchik

Your dough was probably thicker than mine.
You adhered to the proportion 2st: 1st, that so few pancakes turned out? I basically whiten like this: for 1 liter of milk (this is a little more than 4 glasses) I take 2 tbsp. flour (without ramming in bulk).
How many grams of flour I have not weighed. If you are interested, I can weigh.
And yet, maybe your pan diameter is larger, therefore, the pancakes turned out to be slightly smaller.

Yes! with a Teflon coating, I have a large frying pan, and pancakes were fried on it, since medium non-teflon and the pancakes were sticking). So, probably the thickness of the pancakes we had the same .. Thanks again
Boo Boo
For the first time in my life I got pancakes, thanks for the recipe !!!!!!!!!!!!
Knead in a blender from the Cube, poured directly from the blender into the frying pan. At first, too, it did not work out very well, but then I guessed to make more fire and it went well. Where else can I get a pancake pan ............... ..

Pancakes are thin (napoli).

And where is the difference ??? These pancakes, eat as you want! Would you like it, wrap the cottage cheese, there will be a dough, if you want meat, wrap the cheese, there will be a pancake with a filling, but if you want, just put it in the sour cream and nya-yum !!!
Try it, the recipe is really wonderful!
Hemul
That is, a leaflet, does it mean you need to put something on the sheet?)) Filling .. And if not, it will just be a pancake.
I will definitely try to bake it, it looks very appetizing.

Maybe I'm not right, but for me, napilnik, this is when cottage cheese + sugar + raw egg is smeared on a pancake. Curled up with a roll, then cut into pieces, placed in a frying pan or a greased form, poured with sour cream and warmed up
Aprelevna
All my life I have been baking only thin pancakes, either in the pan or in the pancake maker,
I make the dough almost the same as in Zingerbut, only 2 eggs lay.
I have never known such a name "nalistnik".
I always have them lonely thin for stuffing, and just for dipping ...

Today I baked here, celebrated the first day of Shrovetide.

And I read the beginning and think, that's all right, that's what I always thought ... but then I realized that I was mistaken ... Although .... what's the difference! Is it right, can it be tastier than mom's, not right from childhood?

At first glance, these are just pancakes with some content. In fact, the casing for the napilnik differs from just a pancake in taste and properties: it is thinner, more elastic, and has a neutral taste. And all this in order to conveniently serve the filling, so that its taste is not overshadowed by anything. A regular pancake is not very suitable for this - it is both thicker and more porous, and cannot always retain the moisture of juicy fillers.

Nistniki differ from pancakes in shape. As for the dough or fillings, they are prepared in exactly the same way as any other pancakes. To prepare the spreads, the filling is spread on the pancake in a thin layer, the pancake is wrapped in a tube ("cigarette"), fried in oil in a pan - the spreads are ready.

Nalistniki are spring rolls, a dish made from unleavened egg batter in a greased hot frying pan. Pancakes are served with various appetizers, sour cream or stuffed; jam, mushrooms, meat, berries, homemade cottage cheese, raisins, boiled cereals, fish caviar, etc.

The dish is especially widespread in Ukraine and Moldova.

Zhivchik , thanks for the patches, they are very tasty and thin.
I did it in 2 cast-iron pans, they bake very quickly, then I imagined the speed and strength with which it is necessary to manage with three pans
In general, now this recipe is one of my favorites !!!!!

Three pans is okay if the heat is set correctly.
My mother, in general, bakes in 4 pans. Once she asked me to change it for 5 minutes, then my head almost went like a wrap. And she's fine.

Thank you very much: girl_claping: for the recipe for such wonderful and, most importantly, very, very tasty pancakes. I'm just waiting for the experts for pancakes!

Maroshka, Vera, I'm glad you liked the pancakes.

Zhivchik, thank you very much for the recipe. I have never been friends with pancakes, always lumps, but according to this recipe ... there are simply no words! Thin and delicious! My husband said that now I am ready for the role of a grandmother! He had never eaten such delicious pancakes!
And he also asked if I noticed how much he ate? Always no more than 3-4 pieces, these are those made by the mother-in-law. With your pancake recipe, I just grew in my eyes. THANK YOU!!!!
Liusa
I have been looking for a recipe for such pancakes for a long time ... how many recipes I have tried, all wooden ones turned out. And I want just such, thin and gentle. I will try the leaflets

Nothing for myself ... I just go to bed at 5, and you've already baked pancakes and made strawberry jam.
Good leaflets turned out. Thin.
You probably beat the eggs until frothy, what are the delicate ones? And fried it on a big fire, right? And then podzharestkie divorces turned out.

I usually do not beat the eggs into a foam, so that the pancakes are delicate and the filling does not fall out. And fry on less than medium heat.

Svetik, all the same you had them delicious. I know.

pancakes are a miracle !!!!
thanks for the recipe!

And I brought thanks belatedly for such a good recipe. I often use slightly sour milk for pancakes, and according to this recipe, they are thin from such milk. But I just beat everything with a blender, that is, for a couple of seconds everything is liquid without flour, and then for a minute and a half at maximum speed all together. It turns out very quickly

And I always use only fresh milk for nalisniki, it seems to me that they do not come out like that from sour milk ... It's easy to use another dough, but here just not sour ...
LiudmiLka
Luysia, this is how I save the milk. We sometimes bring a lot from the village, the road is long and it is not always possible to keep it fresh. Of course, you need to make only from fresh, but according to this recipe, thin and soft are obtained from sour
dopleta
I always bake such pancakes (don't swear) not with milk, but with water. And I only lay two eggs. It seems to me that according to this recipe they are both softer and thinner.
Luysia
dopleta, two eggs per liter of water?

Exactly!
Lozja
And I take half and half milk and water. If you take milk alone, for me personally they are a little harsh, but with water they are much softer. Well, for about 750-1000 ml of liquid, I throw one large egg. Because eggs still give rubberiness. And I don't pour any butter into the dough, as well as into the frying pan. All for the same reason - butter also gives such a rubberiness and rigidity to the pancake dough. Well then. Milk, water, egg, a pinch of salt, sugar by the eye, flour to the desired thickness. The result is something so thin and delicate, gentle, swept away with lightning speed. If you also pour vanilla sugar into the dough - then finally.
But this is all for an amateur and a matter of taste and habit.

Actually, according to the rules, you need to replace at least 10 percent of milk with water. I don’t remember why. It seems that there will be no holes.

By the way, about the number of eggs. I have one of my favorite pancake recipes, where you only need 3 eggs for 6 glasses of flour and 9 glasses of milk.

It depends on how fat the milk is. If homemade, then you can add a little water.
In general, I do not quite understand what kind of rubberiness you are talking about. According to this recipe, the pancakes are very tender and soft.
For me, pancakes on the water are always an association with store-bought rubber pancakes.

The holes are not caused by water or milk, but by beating eggs (whites).
I stir the dough in a cocktail mixer. That is, there is not a single bubble in the dough. Therefore, there are no holes on the finished pancake.
Once I beat the dough at low speed with an ordinary mixer, but I did not like the result. There were holes on the pancakes. And they do not fit the handcuffs.

Homemade milk. If the store, then add water about one third.
That's why I added it at the end because it's all a matter of taste and habit. All my life I have eaten such pancakes, and after them I have pancakes with a bunch of eggs and butter - a little rubbery. It's just a feeling in comparison. And to someone - they are tender and the most delicious. It's all a matter of habit, I repeat. There is no dispute about tastes.

Why did I think about the rubberiness of the eggs, I just ate potato pancakes all my life, cooked with an egg, that's what my mother does. And then in the internet I read a recipe where there are no eggs, just potatoes and a couple of tablespoons of flour. And I liked these potato pancakes much more. They are more tender, especially on the second day, than with an egg. And with the egg, the rubbery ones were already on the second day. By rubbery, I mean only the comparative sensations of light rubberiness, and not directly that you shouldn't chew.

She didn't want to offend anyone, if anything.

A friend of my mother's praised whey pancakes so much that they are so tender and delicious. My mom cooked. After swearing to cook on whey, because they were so rubber.
